Add the grated ginger, garlic, Worcestershire sauce, white wine vinegar, smoked paprika, salt, and pepper.
Stir well and bring to a simmer over medium heat.
Once simmering, reduce the heat to low and cook for 20-25 minutes, or until the sauce has thickened.
Taste the sauce and adjust the flavors if necessary, adding more honey for sweetness or vinegar for tanginess.
Let it cool slightly, then blend until smooth with an immersion blender for a smoother consistency, if desired.
Serve with grilled meats, chicken, or roasted vegetables. It can be stored in the refrigerator for up to a week.
