Peel the fresh ginger and slice it into thin rounds to easily release its flavor during brewing.
Pour 500 ml of water into a medium saucepan, and add the sliced ginger and cinnamon stick.
Bring the water to a boil, then reduce the heat and let it simmer gently for 10-15 minutes to allow the flavors to meld together.
Remove from heat and let it cool slightly to preserve the beneficial properties of honey and lemon juice when added.
Stir in the honey and freshly squeezed lemon juice, then mix thoroughly.
Strain the tea into a mug and serve warm, optionally garnished with a lemon slice or extra ginger slice.
