Stir the grated goat cheese into the milky egg yolk mixture.
Whisk the egg whites until stiff peaks form, and gently fold them into the cheese and honey mixture.
Butter a soufflé dish, then pour in the cheese and honey mixture.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé is nicely risen and golden brown.
Once ready, let it cool slightly, then serve warm.
