Prepare the ingredients: juice the limes and lemon, peel and mince the garlic.
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
Pour in the lime and lemon juice, then add the honey, brown sugar, apple cider vinegar, and chili flakes.
Season with salt and pepper, and stir well to combine.
Bring the sauce to a simmer, then reduce the heat to low and cook for 10-15 minutes, or until slightly thickened.
Taste the sauce, and adjust the seasonings as needed, adding more honey for sweetness or chili flakes for extra heat.
Let the sauce cool slightly, then blend until smooth using an immersion blender if you prefer a smoother consistency.
Serve with grilled meats, chicken, or roasted vegetables. Store in the refrigerator for up to one week.
