Thoroughly wash the lemons and slice them thinly. Make sure to remove any seeds from the slices.
Place the lemon slices and cinnamon stick in the bottom of a large pitcher. Gently muddle the lemons with a wooden spoon to release their juice.
Add the honey and mix well until completely dissolved.
Pour in the apple juice and let it sit for 10 minutes to allow the flavors to meld.
Fill the pitcher with ice cubes, then top with sparkling water. Stir gently to avoid losing the carbonation.
Serve the cider in chilled glasses, garnished with lemon slices.
