Prepare the ingredients: peel and finely grate the ginger and garlic. Squeeze the juice from the limes and lemon.
In a small saucepan, heat the olive oil over medium heat. Add the grated ginger and garlic, and sauté for 1-2 minutes, until fragrant.
Pour in the lime and lemon juice, then add the honey and water. Stir well until the honey is completely dissolved.
Season with salt and black pepper. Bring the sauce to a simmer, then reduce the heat to low and cook for 5-7 minutes, or until the sauce has slightly thickened.
Taste the sauce and adjust the flavors as needed. Add more honey for a sweeter taste, or more lime juice for a tangier flavor.
Let the sauce cool completely, then transfer to a clean, airtight jar. Store in the refrigerator for up to one week.
