Prepare all the ingredients. Allow the butter to soften at room temperature for easier handling. Whisk the egg with the sugar and honey.
In a bowl, whisk together the flour, baking powder, and a pinch of salt. This will be your dry mixture.
Add the whisked egg mixture, softened butter, lemon zest, and honey to the dry ingredients. Mix well until a smooth dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to rest.
Once the dough has chilled, roll it out to a thickness of about 5 mm on a lightly floured surface. Use a cookie cutter to shape the linzer cookies. Cut out a small, medium-sized hole in half of the shaped cookies, so the jam will be visible.
Bake the linzer cookies in a preheated oven at 350°F (180°C) for 8-10 minutes, or until golden brown.
After the linzer cookies have cooled, spread jam on the solid cookies, and then top with the cookies with holes. Sprinkle the assembled cookies with a pinch of cinnamon, if desired.
