Finely chop the red onion, peeled apple, and dried plums (prunes) into small pieces for even cooking.
In a medium saucepan, heat the olive oil over medium heat. Add the red onion and sauté until translucent.
Add the chopped apple and dried plums (prunes), and stir well to combine.
Pour in the red wine and stir to incorporate all the flavors.
Add the honey, cinnamon stick, and nutmeg. Simmer over low heat for 20-25 minutes, or until the chutney has thickened.
Stir in the apple cider vinegar and fresh lemon juice.
Season with salt and black pepper. Cook for an additional 5 minutes to allow the flavors to meld.
Let it cool. Serve with cheeses, roasted meats, or even on toast for a unique flavor experience.
