In a large bowl, combine the flour, dry yeast, sugar, and salt. Add the lukewarm water, melted butter, Dijon mustard, and honey, then mix until a dough forms.
Knead the dough for 8-10 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Divide the risen dough into 8 equal portions. Roll each portion into a long rope, then shape into a pretzel.
Bring 1 liter of water to a boil, remove from heat, and stir in the baking soda (be careful, it will fizz!).
Dip each pretzel into the baking soda water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.
In a small bowl, whisk together the mustard and honey, then brush the mixture generously over the top of the pretzels, ensuring they are well coated.
Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, or until golden brown and crispy. Best served fresh.
