Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
In a bowl, combine the rolled oats, flour, baking powder, and a pinch of salt.
In a separate bowl, whisk the eggs, then add the honey, vanilla extract, oil, and milk. Whisk until smooth.
Slowly add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
Fill the muffin liners about three-quarters full to allow room for rising.
Bake for 20-25 minutes, or until golden brown. You can check for doneness by inserting a toothpick into the center; it should come out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
