Prepare the ingredients: deseed and finely chop the chili pepper, peel and grate the garlic and ginger, and juice the limes.
In a medium skillet, toast the sesame seeds over medium heat for 2-3 minutes, or until golden brown, shaking the pan occasionally to prevent burning.
Heat the sesame oil in the same skillet. Add the chopped garlic, ginger, and chili pepper. Sauté for 1-2 minutes, until fragrant.
Pour in the freshly squeezed lime juice, soy sauce, and honey. Stir well to combine.
Season with salt and pepper. Bring the sauce to a simmer, then reduce the heat to low and cook for 5-7 minutes, or until slightly thickened.
Add the toasted sesame seeds and stir thoroughly to infuse the flavors.
Let the sauce cool slightly, then serve with grilled meats, vegetables, or noodles.
