In a large bowl, combine the flour, powdered sugar, cinnamon, baking powder, and a pinch of salt. TIP: Sift the dry ingredients for a lighter dough.
Melt the butter and mix it with the honey, then add the egg yolk and vanilla sugar. TIP: Don't overheat the butter, just melt it.
Pour the wet ingredients into the dry mixture and knead until a smooth dough forms. TIP: If the dough is too sticky, add a little more flour.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Roll out the dough to about 5mm thickness and cut out star shapes using a cookie cutter. TIP: Flour the cookie cutter to prevent the dough from sticking.
Place the stars on the baking sheet and bake for 8-10 minutes, or until golden brown. TIP: Do not overbake, as they will firm up as they cool.
Let the honey stars cool completely, then serve or decorate with icing. TIP: They will stay fresh for a long time in an airtight container.
