Wash the mixed berries and chop them into smaller pieces if necessary. Zest the lime and squeeze out the juice.
In a medium saucepan, combine the berries, honey, lime juice, lime zest, and tequila.
Heat over medium heat and cook for 5-7 minutes, or until the berries release their juices and soften slightly.
In a separate small bowl, dissolve the cornstarch in water. Gradually add the cornstarch slurry to the simmering sauce.
Add the vanilla extract and a pinch of salt. Cook, stirring constantly, for an additional 3-4 minutes, or until the sauce thickens.
Let the sauce cool slightly before serving over pancakes, waffles, or grilled meats. Store in the refrigerator for up to 3-4 days.
