Preheat oven to 350°F (180°C). Grease and lightly flour a 9-inch (22 cm) cake pan.
In a bowl, whisk together the flour and baking powder. This ensures the cake rises evenly.
In another mixing bowl, beat the eggs with the granulated sugar and vanilla sugar until light and fluffy.
In a small saucepan, melt the butter, then stir in the honey and vanilla extract. Let it cool slightly.
Slowly drizzle the butter-honey mixture into the egg mixture, whisking constantly to combine thoroughly.
Alternately add the dry ingredients and milk to the egg mixture, beginning and ending with the dry ingredients. This helps maintain a smooth batter.
Pour the batter into the prepared cake pan and spread evenly with a spatula.
Bake in the preheated oven for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean. Avoid opening the oven door during the first 30 minutes to prevent the cake from collapsing.
Once baked, let the cake rest in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
Before serving, dust with powdered sugar. Enjoy with a cup of hot tea or coffee.
