    Preparation Steps

    1

Preheat oven to 350°F (180°C). Grease and flour a 9-inch (22 cm) cake pan.

    2

Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form.

    3

In a separate bowl, cream together the egg yolks, sugar, honey, and vanilla sugar until light and fluffy. Add the melted butter and milk, and mix well.

    4

In another bowl, combine the flour, baking powder, cinnamon, and ground walnuts.

    5

Gradually add the dry ingredients to the egg yolk mixture, then gently fold in the beaten egg whites until just combined. Be careful not to overmix.

    6

Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

    7

Remove the cake from the oven and let it cool completely in the pan.

    8

Prepare the chocolate glaze: heat the heavy cream until just simmering. Pour over the finely chopped dark chocolate and stir until smooth and glossy.

    9

Pour the chocolate glaze over the top and sides of the cake, then decorate with whole walnuts.

    10

Refrigerate the cake for at least 1 hour to allow the chocolate to set before slicing and serving.
