Finely grind the walnuts, then mix them with the cinnamon and sugar.
In a skillet, toast the breadcrumbs with half of the butter until lightly golden brown. Keep an eye on it, breadcrumbs can burn quickly.
Warm the honey slightly to make it easier to pour and spread.
Lay out one sheet of strudel pastry on a clean kitchen towel. Brush with melted butter, then sprinkle with toasted breadcrumbs and the walnut mixture.
Drizzle the honey over the walnut filling, then roll up the strudel tightly.
Place the strudels into a greased baking pan.
Whisk the egg and brush it over the top of the strudels to give them a beautiful golden-brown color while baking.
Bake in a preheated oven at 350°F (180°C) for 30-40 minutes, or until golden brown and crispy.
Before serving, let it cool slightly, then slice and serve warm.
