In another bowl, whisk the eggs, then add the milk and vanilla extract.
Gradually whisk the wet ingredients into the dry ingredients until you have a thick, smooth batter.
Pour the melted butter into the batter and stir gently to combine.
Heat a lightly greased griddle or frying pan over medium heat.
Pour about 1/2 ladle of batter onto the hot griddle for each hotcake. Cook for 2-3 minutes, or until bubbles form on the surface.
Carefully flip the hotcakes and cook for another 1-2 minutes, or until golden brown.
Repeat the process with the remaining batter until all hotcakes are cooked.
Serve warm, drizzled with maple syrup or honey, and garnished with fresh fruit.
