Hotteok Korean sweet pancake served

Hotteok

Hotteok is a traditional Korean street food, often enjoyed during the cold winter months. The pancake is crispy on the outside, and soft and sweet on the inside, filled with a brown sugar and nut mixture that caramelizes as it cooks. In Korea, it's common to find them at markets and street vendors, where they are freshly made and served hot. The secret to perfect Hotteok is well-proofed dough and slow frying over low heat, which ensures the desired texture and even caramelization of the filling. Every bite of a hot Hotteok offers a sweet, spicy experience.

    Preparation Steps

    1

In a bowl, combine the lukewarm water, sugar, and yeast. Let it stand for 5-10 minutes, until foamy.

    2

In a large bowl, mix the flour and salt. Add the yeast mixture.

    3

Mix the dough and knead until smooth. Cover and let it rise for 1 hour, or until doubled in size.

    4

Meanwhile, prepare the filling: combine the brown sugar, ground nuts, and cinnamon.

    5

Divide the dough into 6-8 equal portions and shape them into balls.

    6

Flatten the dough balls, place a spoonful of filling in the center, and seal the edges to enclose the filling.

    7

Heat a skillet over medium heat and add a little oil.

    8

Place the filled dough in the skillet and press down on them with a spatula to flatten them slightly.

    9

Fry for 2-3 minutes, until golden brown on the bottom, then flip and fry for another 2 minutes.

    10

Remove from the skillet and let cool slightly, then serve warm.
