Melt the butter in a small saucepan, then let it cool to room temperature.
In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until evenly combined.
In another bowl, whisk the eggs, then add the melted butter, vanilla extract, honey, and milk. Mix until smooth to form a homogeneous batter.
Preheat the waffle iron and lightly grease it with butter or oil to prevent the batter from sticking.
Pour a portion of the batter onto the waffle iron, and sprinkle with caramelized walnuts and raisins.
Cook until golden brown, about 5-7 minutes, or until the waffle is crispy on the outside and soft on the inside.
Remove the cooked waffle and let it cool on a wire rack for a few minutes.
Sprinkle with freshly grated lemon zest for extra freshness.
Serve with whipped cream, and optionally drizzle with a little honey or sprinkle with a pinch of cinnamon.
