Hungarian Lecso is a true summer dish made with fresh, juicy vegetables, perfectly capturing the atmosphere of the rural kitchen. The base of bell peppers, tomatoes, and onions provides the flavor that is indispensable in Hungarian cuisine. Many people like to enrich lecso with sausage or eggs to make it even more mouth-watering.
Lecsó has been part of Hungarian meals for centuries, and although it can be prepared in many ways, the goal is always the same: a fresh, mouth-watering dish that is especially popular in the summer months. Due to the simplicity of the dish and its fresh ingredients, it is easy to prepare and will always remain a favorite dish for the whole family.
Heat the oil in a large skillet over medium heat. Sauté the finely chopped onions and garlic until softened.
Add the sliced bell peppers and tomatoes. Simmer for 10-15 minutes, or until the vegetables are tender.
Sprinkle with Hungarian sweet paprika, salt, and pepper. Add the sliced smoked sausage.
Continue to cook for another 10-15 minutes, allowing the sausage to cook through and the flavors to meld.
Serve hot with fresh bread or rice.
