In a clean jar, place the finely chopped Hungarian sausage, minced garlic, black peppercorns, and bay leaf.
Pour in the vodka or fruit brandy (Pálinka), and stir to combine the flavors.
Seal the jar and place it in a dark, cool place for 7 days. Shake the jar once a day.
After a week, strain the liqueur to remove the solids.
Add honey if you would like to soften and slightly sweeten the liqueur. Stir well to dissolve.
Pour the strained liqueur back into a clean bottle and store in the refrigerator. Serve chilled as an aperitif.
