Pat the Iberico Secreto pork dry with paper towels to remove any excess moisture.
In a bowl, combine the olive oil, minced garlic, fresh rosemary, smoked paprika, salt, and pepper.
Rub the marinade mixture all over the pork slices, ensuring they are thoroughly coated. Let it rest at room temperature for 30 minutes.
Heat a grill pan over medium-high heat. Once the pan is hot, place the pork slices in the pan.
Cook the secreto for 2-3 minutes per side, until a beautiful golden-brown crust forms. Be careful not to overcook the pork, as it should remain juicy.
Remove the pork from the pan and let it rest for 5 minutes to allow the juices to redistribute.
Serve the secreto with fresh lemon wedges, which can be squeezed over the meat just before serving. Steamed vegetables or roasted potatoes make an excellent accompaniment.
