Wash and chop the fresh strawberries. Place them in a blender.
Add the honey, lemon juice, and 100 ml of apple cider. Blend until smooth.
Fill glasses with ice cubes, then pour in the strawberry puree.
Top with the remaining apple cider and gently stir to create a layered effect.
Garnish with fresh mint leaves and a strawberry slice on the rim of each glass.
