In a bowl, combine the ground beef with curry powder, garam masala, grated ginger, minced garlic, salt, and black pepper. Mix well, then form into 4 equal-sized patties.
Heat a skillet or grill over medium-high heat. Cook the patties for 3-4 minutes on one side, then flip.
After flipping, spread a little mango chutney over each patty. Cover the skillet to allow the flavors to meld together.
Halve the hamburger buns and spread butter on the cut sides. Toast in a skillet until golden brown.
Place a layer of fresh cilantro on the bottom half of each bun, then top with a curried beef patty.
Add tomato slices, thinly sliced red onion, and green chili (if using) on top of the patty.
Spread a layer of yogurt and mango chutney on the top half of the bun before closing the burger.
Serve immediately with french fries or Indian spiced roasted cauliflower.
