Add the eggs, milk, and olive oil, then mix thoroughly until you have a smooth, medium-thick batter. Tip: You can use an immersion blender to ensure the batter is lump-free.
Stir in the cooked chickpeas (whole or slightly crushed), followed by the finely chopped fresh cilantro. Tip: If the chickpeas are too hard, soak and cook them thoroughly beforehand.
Preheat your waffle iron and grease it lightly. Pour in the batter and cook until golden brown, about 4-6 minutes. Tip: The inside of the waffle will remain moist due to the chickpeas, but the outside should be crispy!
Serve warm, sprinkled with fresh cilantro, and with a yogurt dip or chutney. Tip: These waffles are great on their own, but even more exciting when served with an Indian-inspired dipping sauce.
