Prepare the ingredients: mash the cooked potatoes, finely chop the onion, ginger, and garlic.
In a bowl, combine the chickpea flour, mashed potatoes, green peas, and spices (chili powder, turmeric, coriander, and salt). Mix well to form a cohesive mixture.
Shape the mixture into patties and fry them in hot oil until golden brown on both sides. Drain on paper towels to remove excess oil.
Prepare the mint yogurt sauce: mix the yogurt with the chopped mint and a pinch of salt.
Lightly toast the inside of the burger buns to make them crispy.
Assemble the burger: place a patty on the bottom half of a bun, spoon over the yogurt sauce, and top with the other half of the bun.
