In a bowl, whisk together the flour, baking powder, and salt. In another bowl, whisk the eggs, then add the milk, melted butter, and grated Parmesan cheese.
Pour the wet ingredients into the dry ingredients and mix until you have a smooth batter.
Preheat the waffle iron and scoop in a portion of batter. Cook for 3-5 minutes, or until golden brown.
Brush the cooked waffles with a little olive oil, then top with prosciutto slices.
Sprinkle with fresh arugula and basil, then drizzle with a little balsamic vinegar for extra flavor.
Serve fresh, optionally with more grated Parmesan cheese on top.
