Pour the apple juice into a large pitcher or bowl and add the sugar. Stir until the sugar is completely dissolved.
Add the lemon zest, orange zest, and fresh rosemary to infuse the drink with unique flavors.
Cover the pitcher and let it sit at room temperature for 1-2 hours to allow the flavors to meld.
Strain the mixture to remove the zests and rosemary. Then, gently pour in the Prosecco.
Stir gently to combine, being careful not to lose the Prosecco's bubbles.
Pour the cider into sterilized bottles or directly into serving glasses.
Chill the cider in the refrigerator for at least 1 hour. Serve cold, garnished with a sprig of rosemary.
