In a large bowl, combine the flour, dry yeast, sugar, and salt. Add the lukewarm water and melted butter, then mix until a dough forms.
Knead the dough for 8-10 minutes, until smooth and elastic. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Divide the dough into 8 equal portions. Roll each portion into a long rope, then shape them into pretzel shapes.
Bring 1 liter of water to a boil, remove from heat, and stir in the baking soda (be careful, it will foam!).
Dip each pretzel into the baking soda water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.
Finely chop the jalapeño peppers and sprinkle them over the pretzels. Top with the grated cheese to make every bite flavorful and spicy.
Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, until golden brown and crispy. Best served fresh.
