Prepare the ingredients: deseed and finely chop the jalapeños, peel and chop the garlic and onion, and juice the limes.
Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes, or until translucent.
Add the chopped jalapeños and cook for another 2 minutes, until slightly softened.
Pour in the tequila and simmer for 2-3 minutes to allow the alcohol to evaporate.
Add the fresh lime juice and honey, then stir well to combine. Season with salt and pepper.
Bring the sauce to a simmer, then reduce the heat to low and cook for 10-15 minutes, or until the sauce has slightly thickened.
Taste the sauce and adjust the flavors as needed, adding more lime juice for a tangier taste or more honey for a sweeter flavor.
Let the sauce cool slightly, then blend until smooth using an immersion blender. Serve with grilled meats, roasted vegetables, or pasta dishes.
