Preparation: Peel and dice the pineapple. Finely chop the jalapeño peppers, red chili pepper, and garlic.
Sauté: In a medium saucepan, heat some oil over medium heat. Add the garlic, jalapeños, and chili pepper, and sauté for 2-3 minutes, until fragrant.
Add Liquids: Add the pineapple, rice vinegar, lime juice, and water. Stir well to combine.
Seasoning: Add the brown sugar and salt. Simmer over medium heat for 15-20 minutes, or until the pineapple has softened and the flavors have melded together.
Purée: Use an immersion blender to purée the sauce until smooth. Adjust the flavors as needed by adding more lime juice or sugar.
Serving: Serve the sauce warm or cold with grilled meats, seafood, or rice dishes.
