Wash the jalapeños, remove the stems, and if you prefer a milder sauce, remove the seeds. Peel the garlic cloves.
Toast the sesame seeds in a dry skillet over medium heat until golden brown. Set aside to cool.
In a blender, combine the tahini, lemon juice, water, olive oil, jalapeños, and garlic. Blend until smooth.
Season with salt and pepper. Add the toasted sesame seeds and stir to combine.
For a thicker sauce, add less water; for a thinner sauce, add more water. Serve with fresh vegetables, salads, or grilled meats.
