Cover the pitcher and let it sit at room temperature for 1-2 hours, allowing the flavors to meld.
Strain the cider through a fine-mesh sieve or cheesecloth to remove the spices and ginger.
Pour the cider into sterilized bottles and seal them tightly.
Chill the cider in the refrigerator for at least 2 hours before serving cold.
