Let the batter rest for 15-20 minutes. This allows the ingredients to meld together and the kefir to work its magic, resulting in softer, airier pancakes.
Lightly grease a skillet with oil and heat over medium heat.
Pour a ladleful of batter into the hot skillet, spreading it evenly. Cook for 2-3 minutes, or until the edges begin to set and release from the pan. Flip and cook for an additional 1-2 minutes, until golden brown.
Repeat the process with the remaining batter, re-greasing the skillet as needed.
Serve the kefir pancakes with honey, jam, or fresh fruit.
