In a large bowl, combine the flour, baking powder, and salt. Rub in the butter until the mixture resembles breadcrumbs.
Add the beaten eggs and milk, and mix until a soft dough forms. If the dough is too sticky, add a little more flour.
Turn the dough out onto a lightly floured surface and knead briefly. Divide the dough into small portions. Roll each portion out and cut into strips approximately 10 cm long and 1 cm wide.
Braid three strips together to form a braided shape. Pinch the ends together to prevent them from unraveling during frying.
Heat the oil to approximately 350°F (180°C) and fry the braids until golden brown, about 2-3 minutes per side. Remove and place on paper towels to drain excess oil.
Meanwhile, prepare the syrup: in a saucepan, combine the sugar, water, lemon juice, and honey. Bring to a boil, then reduce heat and simmer for about 5 minutes, or until a syrupy consistency is reached.
While still hot, dip the fried dough into the hot syrup, ensuring they are fully coated. Place on a wire rack to dry.
The Koeksister will be crispy on the outside and sticky-sweet on the inside. Serve immediately or store in an airtight container.
