In a large bowl, combine the ground meat, finely chopped onion, minced garlic, parsley, and spices. Mix well with your hands. Tip: If you have time, let the mixture rest in the refrigerator for 30 minutes to allow the flavors to meld.
Shape the mixture into walnut-sized balls, then flatten them slightly into patties. Tip: Wet your hands to prevent the mixture from sticking.
Cook on a grill or in a grill pan over medium heat for 3–4 minutes per side, until golden brown and cooked through. Avoid overcooking to keep them juicy!
Cut the vegetables into large pieces, lightly oil them, and grill until tender. Tip: Add the tomatoes at the end, as they soften quickly.
Warm the flatbread in a pan or oven. Serve the plain yogurt on its own, or mix with garlic for a dipping sauce.
To serve: Serve the köfte warm with grilled vegetables, warm flatbread, and yogurt sauce. Garnish with fresh parsley before serving.
