Prepare the ingredients: chop the kimchi and green onions, mince the garlic.
In a skillet, heat 1 tablespoon of sesame oil over medium heat. Cook the ground pork until browned. Add soy sauce, sugar, and minced garlic, then stir to combine. Remove from heat and let cool slightly.
In a bowl, whisk together the flour, baking powder, and salt. In another bowl, whisk the eggs, then add the milk and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Add the kimchi and cooked ground pork to the waffle batter and gently fold to incorporate.
Preheat a waffle iron. Pour a portion of the batter onto the hot waffle iron and cook for 3-5 minutes, or until golden brown.
Serve fresh, garnished with fresh green onions and a little extra kimchi on top.
