Place the ground beef in a large bowl. Add the minced garlic, grated ginger, egg, breadcrumbs, and soy sauce. Mix thoroughly until well combined.
Form the mixture into four patties. Over medium heat, melt butter in a skillet and cook the patties on both sides until golden brown.
Toast the insides of the burger buns until crispy.
Prepare the kimchi and iceberg lettuce. If the kimchi is in large pieces, chop it into smaller pieces.
Assemble the burger: place a lettuce leaf on the bottom bun, top with a beef patty, generously pile on the kimchi, and drizzle with a little sriracha sauce. Cover with the top bun.
