Preheat your grill or skillet to medium-high heat. Pat the kudu steaks dry with paper towels.
In a small bowl, combine the olive oil, minced garlic, fresh rosemary, salt, and pepper. Rub this marinade all over both sides of the steaks.
Place the steaks on the hot grill or in the hot skillet and cook for 3-4 minutes per side, until a golden-brown crust forms. Cooking time will vary depending on your desired level of doneness.
As the steak is nearly done, add a knob of butter to the pan and baste the steaks with the melted butter to add extra flavor and juiciness.
Remove the steaks from the heat and let them rest for 5 minutes to allow the juices to redistribute throughout the meat.
Serve the kudu steaks with fresh lemon wedges and steamed vegetables or roasted potatoes. Garnish with fresh rosemary, if desired.
