Kürtőskalács is a traditional Hungarian sweet, an indispensable part of street markets and fairs. Kürtőskalács is made with special, long strips of dough that are wound around a wooden stick, then the dough is baked to be crispy on the outside and soft on the inside. The origin of Kürtőskalács can be traced back to Hungary, but it is also popular in neighboring countries. Making it is not complicated, but it takes a lot of time and patience, as the dough must be constantly rotated over the fire. At the end, Kürtőskalács is sprinkled with sugar or even nuts, so each bite provides a sweet and crispy enjoyment.
Warm the milk, then mix in the yeast and one teaspoon of sugar. Let it proof.
Combine the flour, sugar, eggs, salt, and melted butter, then add the proofed yeast mixture. Knead into a smooth dough.
Cover the dough and let it rise in a warm place for 1 hour.
Roll out the dough and cut it into long strips. Wrap them around a Kürtőskalács form or a baking pin.
Sprinkle the wrapped dough with sugar and cinnamon, then bake in a grill oven or regular oven at 392°F (200°C) for about 15-20 minutes until golden brown.
When done, serve hot, crispy on the outside and soft on the inside.
