Freshly baked Laffa Middle Eastern flatbread

Laffa - Middle Eastern Flatbread

Laffa is a traditional Middle Eastern flatbread widely consumed in Israel and surrounding countries. Resembling pita bread but softer and more pliable, laffa provides the perfect base for grilled meats, falafel, or dips such as hummus and tahini. The recipe is simple, but the right baking technique ensures the characteristically flexible, slightly puffy texture. Street vendors and restaurants bake it fresh to serve it warm, offering a unique flavor experience.

    Preparation Steps

    1

In a small bowl, combine the lukewarm water, sugar, and yeast. Let it stand for 10 minutes, until the yeast is foamy.

    2

In a large bowl, whisk together the flour and salt.

    3

Add the yeast mixture and olive oil to the flour, and knead until a smooth and elastic dough forms.

    4

Cover the dough and let it rise for 1.5 hours, or until doubled in size.

    5

Divide the dough into 6 equal portions, and roll each portion into a circle about 5 mm thick.

    6

Heat a skillet over medium heat, then place one dough round in the skillet.

    7

Cook for 1-2 minutes per side, or until golden brown spots appear.

    8

Remove from the skillet and cover with a kitchen towel to keep it soft.

    9

Repeat the process with the remaining dough rounds, then serve fresh with hummus, tahini, or grilled meats.
