Peel and grate the apples, then squeeze out any excess liquid.
In a bowl, combine the grated apples, granulated sugar, ground cinnamon, vanilla sugar, lemon juice, and dried lavender. Let it sit for 10 minutes to allow the flavors to meld.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Lay one sheet of strudel dough on a clean kitchen towel and brush it thinly with vegetable oil. Place another sheet of strudel dough on top and repeat the oiling.
Sprinkle the strudel dough with breadcrumbs, then evenly distribute the lavender apple filling over it.
Using the kitchen towel, carefully roll up the strudel and place it on the prepared baking sheet.
Brush the top with beaten egg and bake for 30-35 minutes, or until golden brown.
Let it cool slightly, then slice and serve dusted with powdered sugar.
