1 tbsp Dried Lavender
150 g Dark Chocolate
4 Eggs
80 g Granulated Sugar
50 g All-Purpose Flour
150 ml Milk
30 g Butter
10 g Vanilla Sugar

    Preparation Steps

    Prepare all the ingredients. Measure out the lavender and break the chocolate into smaller pieces.

    Separate the eggs, placing the egg whites in a clean bowl. In a separate bowl, combine the egg yolks with the sugar, vanilla sugar, and lavender.

    Pour the milk and butter into a saucepan and heat over medium heat. Do not let the mixture boil; warm it gently.

    Place the chocolate and butter in a small bowl and melt over a double boiler (bain-marie). Once the chocolate has melted, pour it into the egg yolk mixture and mix well.

    Whisk the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.

    Sift the flour and gradually add it to the chocolate mixture. Mix until well combined.

    Butter a soufflé dish and pour in the chocolate mixture.

    Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the soufflé has risen nicely and is golden brown.

    Once baked, let it cool slightly before serving warm. If desired, sprinkle a little extra dried lavender on top.
