Peel the carrots and slice them thinly. Clean the zucchini, broccoli, and cauliflower, then cut them into smaller pieces.
Bring a large pot of salted water to a boil, and parboil the vegetables for a few minutes until slightly softened. Drain and let them drip dry.
Grease a baking dish with oil and layer the vegetables inside. Season each layer with salt and pepper to taste.
Spread the sour cream over the top, and sprinkle with grated cheese.
Bake in a preheated oven at 350°F (180°C) for 25-30 minutes, or until the cheese is golden brown and bubbly.
Serve hot with fresh bread or a side salad.
