Lebbencsleves is a true classic Hungarian dish, prepared by many families during the cold winter months. The base of the soup is homemade pasta, cut into small, thin strips, then cooked in a rich, meaty broth. Lebbencsleves is light yet nourishing, and the perfect choice for a satisfying lunch or dinner.
The soup offers a unique flavor profile, in which the combination of homemade pasta and meat plays a prominent role. In the old days, lebencsleves was a symbol of culinary creativity, as it was made using various leftover meats and vegetables. Today, it has become a true Hungarian classic, enjoyed by people of all ages.
Dice the smoked bacon and fry it in a pot. Once the fat has rendered, remove the bacon pieces and set aside.
In the rendered bacon fat, toast the Lebbencs pasta until golden brown.
Add the finely chopped onion and garlic, and sauté until translucent.
Sprinkle with Hungarian sweet paprika, then add the diced potatoes.
Pour in the water, season with salt and pepper. Cook the soup until the potatoes are tender.
When serving, sprinkle with the fried bacon.
