Bring 500 ml of water to a boil in a saucepan or kettle.
Slice the fresh ginger into thin pieces and add them to the hot water.
Let it simmer for 5-7 minutes to allow the ginger flavor to infuse well.
Remove from heat and stir in the honey until completely dissolved.
Add the freshly squeezed lemon juice and mix thoroughly.
Pour the tea into mugs and garnish with a lemon slice.
