Finely chop the dill, and mince or grate the garlic.
In a medium bowl, combine the sour cream, freshly squeezed lemon juice, and lemon zest.
Add the chopped dill and minced garlic, then mix thoroughly.
Season with salt and freshly ground white pepper, then mix again until smooth.
Before serving, let it rest in the refrigerator for at least 10 minutes to allow the flavors to meld.
Serve chilled with fish dishes, grilled meats, or fresh vegetables.
