Preheat your oven to 400°F (200°C). Let the pizza dough rest at room temperature for 10 minutes to make it easier to roll out.
On a lightly floured surface, roll out the pizza dough to about 3-4 mm thick. Shape it into a large circle, then cut it into two equal halves.
In a bowl, combine the ricotta cheese, grated Parmesan cheese, minced garlic, lemon zest, chopped basil, salt, and pepper.
Evenly spread the filling on one side of each dough half, leaving a 1-2 cm border for sealing.
Fold the other half of the dough over the filling. Press the edges together with a fork to seal the calzone and prevent the filling from leaking during baking.
In a small bowl, whisk the egg, then brush the top of the calzone with it to help it bake to a beautiful golden brown.
Place the calzones on a baking sheet lined with parchment paper and bake for 15-18 minutes, or until golden brown.
After baking, let it cool slightly, then drizzle with a little olive oil and serve warm.
