50 g Sugar
1 Vanilla Bean
100 ml Lemon Juice
4 Gelatin Sheets
1 Lemon Zest (grated)
2 Lemon Slices (for garnish)

    Soak the gelatin sheets in cold water for 5-10 minutes, until softened.

    In a saucepan, gently heat the heavy cream with the sugar and the scraped seeds from the vanilla bean. Do not boil; just warm it through.

    Remove the saucepan from the heat and stir in the squeezed-out gelatin sheets until completely dissolved.
