Place the quark cheese in a sieve and press out any excess liquid. Combine it with the sugar and grated lemon zest.
Squeeze the juice from the lemon into the quark mixture, then add the cinnamon and mix well to combine the flavors.
In a skillet, toast the breadcrumbs with half of the butter until lightly golden brown.
Lay out the strudel dough sheets individually on a clean kitchen towel. Brush each sheet with a little melted butter, then sprinkle with the toasted breadcrumbs.
Place the quark cheese filling onto the strudel dough sheets, then carefully roll them up. Place the rolls into a lightly buttered baking pan.
Whisk the egg and brush it over the top of the strudels to give them a beautiful golden-brown color while baking.
Bake the strudels in a preheated oven at 350°F (180°C) for 30-40 minutes, or until nicely browned and crispy.
Before serving, let it cool slightly, then slice and serve warm.
